Meat Stuffed Shells

I made these the other night and they were so good I wanted to share how I made them.  Next time I'll take a picture and add it in!

12-14 large pasta shells cooked al dente
1 lb ground beef
1/4 cup bread crumbs
1/4 cup good parmesan cheese (seriously, get good stuff)
1/2 - 1 tpn Italian seasoning
4 cloves of garlic, minced
1 egg lightly beaten
1 jar of your favorite spaghetti sauce

In a large bowl mix the beef, bread crumbs, cheese, seasonings, garlic and egg until combined.  Personally I don't think it needs any salt or pepper but if you disagree this is the time to add it in.   

In a large shallow baking dish pour about a third of the spaghetti sauce, and spread it around.  Scoop the meat mixture into the cooked shells and place them in the baking dish.  Continue until all the meat mixture is used.  Pour the remaining sauce over the stuffed shells.

Bake 350 degrees for about 45 min.  Serve it with garlic bread and a salad.

Etsy shop is open!

UPDATE 13Jan2013 : Whew the shop has sold out and is on vacation mode!  I do intend to restock but I dont have a specific ETA.

A few weeks back I started posting about the initial adventure of opening an Etsy shop, here.  I made my first sale last week and I would love to say adventure well under way but there is a lot more work to do.  Randomly tossed in the guest room is yards and yards of fabric patiently waiting for its moment on the cutting mat.  I have new needles for the sewing machine, lots of extra thread, and did I mention the yards of fabric?  I can't wait to dive in but there have been to many things taking priority.  Work, family, vacation planning more family, husband out of town....the list continues.  So all that to say I have to work this weekend but here are a few pictures of what's ready to ship! (images link to the item on Etsy)  Go me! The next round will be warm fall colors, think plums, soft grey and golds.

Sweet and Dirty Rice

I have no idea what made me think, "yum apricots and sausage", but I did and it worked!  I typically serve this with grilled chicken and a salad.  However, some vegetables added in would make for a one pot meal.

 Makes about 6 servings.

3 cups of cooked long grain rice ( I prefer the flavor of basamati)
16 oz sage flavored ground sausage
1/2 - 3/4 cup chopped apricots
1/4 cup diced shallots
1/4 cup fresh parsley chopped




In a 12 inch skillet with a tight fitting lid begin browning the sausage over a medium heat uncovered.  Using a large spoon or other handy dandy tool break the sausage into pieces.  When the sausage is almost cooked through add the shallots.  Continue cooking until the sausage is no longer pink and the shallots are translucent.  Reduce the heat to low-md and add the rice, string to combine.   Once mixed add the apricots and parsley.  Mix again, place the lid on top.  Allow to heat through (about one minute) before serving.  Enjoy!
