Sweet and Dirty Rice

I have no idea what made me think, "yum apricots and sausage", but I did and it worked!  I typically serve this with grilled chicken and a salad.  However, some vegetables added in would make for a one pot meal.

 Makes about 6 servings.

3 cups of cooked long grain rice ( I prefer the flavor of basamati)
16 oz sage flavored ground sausage
1/2 - 3/4 cup chopped apricots
1/4 cup diced shallots
1/4 cup fresh parsley chopped




In a 12 inch skillet with a tight fitting lid begin browning the sausage over a medium heat uncovered.  Using a large spoon or other handy dandy tool break the sausage into pieces.  When the sausage is almost cooked through add the shallots.  Continue cooking until the sausage is no longer pink and the shallots are translucent.  Reduce the heat to low-md and add the rice, string to combine.   Once mixed add the apricots and parsley.  Mix again, place the lid on top.  Allow to heat through (about one minute) before serving.  Enjoy!
